Melon cocktail

Ingredients:
600g (1lb 5oz) watermelon
600g (1lb 5oz) cantaloupe melon
600g (1lb 5oz) honeydew melon
2-3 tbsp finely shredded mint leaves
2 tbsp honey
sprig of mint, to decorate
Prepare Ahead:
The fruit can be prepared up to 4 hours in advance, and chilled until required.
Preparation:
1 - Using a melon baller, scoop balls of each melon, or cut into 2cm ( ¾ in) cubes. Place the fruit in a large bowl, add the shredded mint and honey, and toss the mixture gently until the melon is evenly coated with the honey.
2 - Cover and refrigerate the melon for at least 30 minutes, turning it frequently so the melon soaks up the flavours of the honey and mint.
3 - When ready to serve, spoon the melon and any juices into individual serving dishes. Decorate each serving with mint.
Variation: Exotic Fruit Cocktail Use one kind of melon and add any variation of cut fruit, such as star fruit, pineapple, kiwi, mango, blueberries, and strawberries.
