Baked jam roll

Ingredients:
225g (8oz) self-raising flour
115g (4oz) shredded suet
4-6 tbsp jam
1 egg, beaten
caster sugar, to sprinkle
custard or cream, to serve
Preparation:
1 - Preheat the oven to 200°C (400°F/Gas 6) and line a baking tray with greaseproof paper.
2 - Put the flour and suet into a mixing bowl and add 100ml (3 ½ fl oz) water. Using a round-bladed knife, mix to a soft but not wet dough. Add more water if necessary.
3 - Put the dough on to a floured work surface and roll to a rectangle measuring 18 × 25cm (7 × 10in). Gently warm the jam in a small pan, but do not allow it to get too hot, or it will burn.
4 - Spread the pastry with jam and roll up loosely. Put on to the baking tray, seam-side down, then brush with beaten egg and sprinkle with a little caster sugar. Bake in the preheated oven for 30 minutes, or until golden brown and crisp. Serve with custard or cream.
