Sole, Mashed Potatoes and Onion Sauce

Ingredients:
300 g sole fillets
2 large potatoes
1 clove of garlic
lemon juice
virgin olive oil
salt
FOR THE ONION SAUCE:
1 large onion
1 dessert spoonful of cane sugar
1 dessert spoonful of lemon juice
olive oil
Preparation:
1 - Cut the washed potatoes into large cubes and boil them until they are well cooked.
2 - Drain them and mash with the crushed garlic, a dash of oil, the salt and a few drops of lemon juice.
3 - Fry the finely chopped onion until it becomes transparent.
4 - Then add the sugar and lemon juice, cover the frying pan and allow it to simmer slowly on a low heat, stirring from time to time, until the sauce thickens.
Tips: DECORATION ON THE PLATE: Serve the sole with a spoonful of mashed potato on top and pour the sauce all over it.
