Children's choice pizza

Children's choice pizza
Serves 6

Ingredients:


400g (14oz) can tomatoes
dried oregano
1 pizza base
50g (2oz) sliced ham
½ red pepper
200g (7oz) can artichoke hearts
45g (1 ½ oz) black olives
fresh basil

Preparation:


1 - Drain and chop the tomatoes. Heat a little olive oil in a saucepan, add the tomatoes and a good pinch of oregano, and simmer until the mixture is slightly thickened.

2 - Preheat the oven to 220°C (425°F, gas 7). Brush the pizza base with a little olive oil, then spread the tomato sauce evenly over the surface.

3 - Cut the ham into strips; slice the pepper; quarter the artichoke hearts; and pit the olives. Place these on the pizza base, then drizzle a little olive oil over the top.

4 - Bake the pizza until the crust is just crisp. Garnish with fresh basil leaves and serve.

Tips: You can use many other toppings, such as sweetcorn, fresh spinach, broccoli florets, aubergine or courgette slices (lightly fried), pineapple chunks, grated mozzarella cheese, canned tuna, strips of cooked chicken, or anchovy fillets.
