Ingredients:


12 smoked back bacon rashers
8 slices of bread, thickly sliced
butter, for spreading
mayonnaise, for spreading
¼ head of iceberg lettuce, shredded
2 ripe tomatoes, sliced
freshly ground black pepper

Preparation:


1 - Heat a large frying pan over a high heat then add the bacon, reduce the heat to medium, and fry for 4-6 minutes, or until crisp, turning once. Drain on kitchen paper.

2 - Lightly toast the bread on both sides.

3 - To assemble the sandwich, spread each slice of bread with a little butter, then spread 4 slices with mayonnaise. Top with a little lettuce, followed by 3 rashers of bacon, a little more lettuce, and tomato slices. Season to taste with pepper, then place the remaining buttered bread slices on top and cut each sandwich in half. Secure with a cocktail stick, and serve at once.
