Balsamic rice with broccoli (340 kcal)

Ingredients:
350 g balsamic rice
400 g small florets of broccoli
2 onions
1 clove of garlic
extra virgin olive oil
1 pinch of cinnamon
1 cm fresh ginger root
½ teaspoonful of pepper
½ teaspoonful of cumin seeds
salt
saffron
Prepare Ahead:
Prepare the Balsamic rice ahead of time to save time.
Preparation:
1 - Heat 3 dessert spoonfuls of oil in a cast iron saucepan, and put in the cinnamon, the onion and the peeled and finely chopped ginger, the pepper, the cumin and the salt.
2 - After 5 minutes add the saffron and 700 ml water.
3 - When the liquid boils, add the rice. Cover and allow to cook for 5 minutes.
4 - Turn off the rice, cover and leave to rest for 10 minutes.
5 - Grease an earthenware bowl with a little oil, or else use 6 small individual dishes, and fill them with the rice. Press well into the mould and then tip out onto a large serving plate or onto each individual plate. Decorate with the slices of onion and serve very hot.
