Low-fat turkey burgers

Ingredients:
450g (1lb) turkey breast fillet
1 tbsp dark soy sauce
1 tsp grated fresh ginger
1 tbsp chopped fresh coriander
½ tsp sea salt
black pepper
seasoned flour
olive oil
Preparation:
1 - Mince or very finely chop the turkey breast fillet.
2 - In a large bowl, combine the minced turkey, soy sauce, ginger, coriander, salt, and freshly ground black pepper. Mix thoroughly, then set aside for a few minutes.
3 - Shape the mixture into four burgers, each about 2.5cm (1in) thick. Dredge each burger in the seasoned flour.
4 - Heat a little olive oil in a frying pan and fry the burgers for 3-4 minutes on each side until they are cooked through. Alternatively, brush each burger with olive oil and grill or bake in a moderately hot oven until they are well cooked through, turning them once.
5 - To serve, wrap each burger in a soft flour tortilla (wrap), and serve with shredded lettuce, avocado slices, and reduced-fat mayonnaise. Or serve in warm wholemeal rolls with plain Greek-style yogurt instead of mayonnaise.
